They have magical powder. <\/span><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><span style=\"box-sizing: border-box; margin: 0px; padding: 0px;\">I love the&nbsp;<strong>unbeatable umami flavor and<\/strong><\/span> the deep, earthy richness similar to MSG, especially in dried ones. <\/li>\n\n\n\n<li><span style=\"box-sizing: border-box; margin: 0px; padding: 0px;\">Among all the differen<\/span>t kinds of mushrooms, the <strong>shiitake tastes most like meat<\/strong>. In many Buddhist cuisines, it is widely used as a replacement for meat.  <\/li>\n\n\n\n<li>I am also a fan of its unique <strong>caramel-brown color <\/strong>and <strong>endless Cooking Possibilities<\/strong>. When it is paired with green vegetables like this one, it feels like spring on the earth.  <\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients <\/h2>\n\n\n\n<p><em>You need just 7 ingredients for this powerhouse dis<\/em>h.  <\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>8-10 fresh shiitake mushrooms<\/strong><\/li>\n\n\n\n<li><strong>1 lb (450g) of asparagus<\/strong><em>(look for pencil-thin stalks)<\/em> and snap off woody ends as they will naturally break where tender.  <\/li>\n\n\n\n<li><strong>3 garlic cloves<\/strong><em>&#8211; roughly chopped, not minced<\/em><\/li>\n\n\n\n<li><strong>2 tbsp oyster sauce<\/strong>&nbsp;&#8211; if you want to turn it into vegan or vegetarian, use mushroom oyster sauce.  <\/li>\n\n\n\n<li><strong>2 tbsp vegetable cooking oil<\/strong>&nbsp;with a higher smoking point. <\/li>\n\n\n\n<li><strong>A small pinch of salt and black pepper<\/strong> &#8211; I find black pepper is excellent for all kinds of mushrooms.  <\/li>\n\n\n\n<li><strong>\u00bd tsp sesame oil<\/strong>&nbsp;<em>for finishing touch<\/em>.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Step by Step <\/h2>\n\n\n\n<p><strong>Prepare the mushrooms:<\/strong> wash the mushrooms, remove the roots, and then cut into thin slices.  <\/p>\n\n\n\n<p><strong>Now the <em>asparagus<\/em><\/strong>: Hold each stalk at both ends\u2014bend until it snaps. It&nbsp;always&nbsp;breaks where the tender begins. Cut into 2-inch pieces.<\/p>\n\n\n\n<p><strong>Blanch the asparagus:<\/strong> I love blanching the harder vegetables in stir-frying dishes. It is a great way to keep them fresh and crunchy. As mushrooms can&#8217;t release water like most dark leafy vegetables, garlic will get burnt very quickly.
