In addition to various types of fried rice, this is my favorite way to use leftover rice. I love to cook it for breakfast. Wrap your leftover rice in a container the previous night <span style=\"box-sizing: border-box; margin: 0px; padding: 0px;\">and <\/span>get this golden brown, crispy rice cake. Both are great, but they have some differences. <\/p>\n\n\n\n<p>The pan-fried version develops a golden, lace-like crust on the surface. When you bite, the internal texture is still soft. Common and ordinary rice into something <\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>3 cups <\/strong><span style=\"box-sizing: border-box; margin: 0px; padding: 0px;\"><strong>of leftover rice<\/strong><\/span>, you may choose to season it with salt and pepper or not.  <\/li>\n\n\n\n<li><strong>1 tbsp lard or neutral oil<\/strong>&nbsp;<em>(for pan-frying)<\/em><\/li>\n\n\n\n<li><strong>2 cups peanut oil<\/strong>&nbsp;*(for deep-fry, 350\u00b0F\/175\u00b0C)<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Step by Step Instructions<\/h2>\n\n\n\n<p>Cover your container with a plastic wrapper, then add the leftover rice. Press down hard with a spatula for the best texture.  <\/p><\/div><\/span><\/div>\n\n\n\n<p><\/p>\n\n\n\n<p>Then slice the rice brick into 1 cm-thick large pieces and cut into smaller ones around 3cm *3cm. Heat oil<em> to <\/em>around 350\u00b0F<em>. You can test the oil temperature with a chopstick. This is our unique Sichuan version.  <\/p><\/div><\/span><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Taste and Serve<\/h2>\n\n\n\n<p>Traditionally, we don&#8217;t season the rice before pan-frying. You can taste the super crispy shell and the faint rice aroma, but the rice doesn&#8217;t have too much flavor. <br>I suggest matching it with your favorite dipping sauce for French fries. But in Chinese breakfast, we serve it with savory pickles and <a href=\"https:\/\/www.chinasichuanfood.com\/how-to-make-congee-rice-porridge\/\">porridge<\/a>. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Store and Reheat<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>I suggest freezing the rice cakes before frying and cooking them unthawed if you made a large batch.
