Do not get scared by the long list of ingredients, it is quite easy and requires little cooking skill. But get yourself a good simmering pot before starting.<\/p>\n<h3>Ingredients<\/h3>\n<ul>\n<li>1000g Beef shank or sirloin<\/li>\n<li>2L beef bone stock or pork stock<\/li>\n<li>2 tablespoons vegetable oil<\/li>\n<li>1 middle size tomato<\/li>\n<li>1\/2 red onion<\/li>\n<li>2 leek onions<\/li>\n<li>2 garlic cloves, sliced<\/li>\n<li>2 tablespoons<a href=\"https:\/\/www.chinasichuanfood.com\/doubanjiang\/\" target=\"_blank\" rel=\"noopener\"> Doubanjiang<\/a><\/li>\n<li>2 tablespoons light soy sauce<\/li>\n<li>Pinch of salt to taste<\/li>\n<li>chopped green onion and coriander (for garnishing)<\/li>\n<li>whole coriander (for decorating)<\/li>\n<li>noodles for 3-4 servings<\/li>\n<\/ul>\n<p><strong>Spices<\/strong><\/p>\n<ul>\n<li>2 bay leaves (\u9999\u53f6)<\/li>\n<li>2 star anises (\u516b\u89d2)<\/li>\n<li>1 teaspoon Sichuan peppercorn seeds (\u82b1\u6912)<\/li>\n<li>1 bark Chinese cinnamon (\u6842\u76ae)<\/li>\n<li>1\/2 teaspoon clove (\u4e01\u9999)<\/li>\n<li>1 small nutmeg (\u8089\u8c46\u853b)<\/li>\n<li>1 Chinese cardamom (\u7802\u4ec1)<\/li>\n<\/ul>\n<h3>Instructions<\/h3>\n<p>Cut beef into larger chunks and then place in a large pot with enough cold water. Throw one spring onion and several ginger slices, bring to a boil and then pick the beef chunks out (so there will be no floating dirt on the meat and we can skip rinsing process.)
